Who else like me loves rooted vegetables especially when they are roasted?!
On this episode of “Cheffin’ It Up with Stretch” I made some roasted vegetables with burdock root and sunchoke. Two vegetables that I’ve never cooked before. I do drink burdock root tea and have the supplements in a pill form but never had the actual vegetable in its natural form.
I include two other dishes with soy butter glazed mushrooms and lemon garlic kale. Here’s to good eating and I hope you enjoy and make it for yourself.
